In Cesi, flavor tells the story of the land.
The gastronomic tradition comes from simple, authentic local products, with extra virgin olive oil standing out as one of the territory’s most precious treasures. Umbrian cuisine preserves recipes handed down through generations, combining conviviality and identity.

Eating in Cesi means discovering the land through its aromas, rhythms, and authenticity.
Cheese, olive oil and truffles are the outstanding products of the Cesi area. Until the last century, a dozen oil mills were to be found in this area.
This produce has been known since ancient times. The mountain slopes around Cesi are rich in olive groves, with the most common quality being the "moraiolo" olive tree.
Furthermore, one of the oldest and biggest olive trees in the world is in Cesi, perhaps the absolute record holder, with a canopy circumference of about 17 meters. Taking into account that the olive tree is a slow growing and very long-lived plant, it is thought that this tree was planted by the ancient Umbrian populations.
Cheese is still produced by local farmers in various mountainous and foothill areas: typically pecorino and ricotta, always made from sheep’s milk.
The truffle, so prized today, was once a poor food, consumed by peasants and lower classes. It was the pig that found it and the peasants used to cook it under the embers or wrapped in bacon. Today, several truffle hunters use dogs in the mountainous areas around Cesi.
Typical dishes from the Cesi cuisine are strappatelle, ciriole, bruschetta with extra virgin olive oil, truffle omelets, crostini, pizza baked under the fire, coratella, lamb scottadito, and pecorino cheeses. All these dishes can be tasted in the Grottino tavern during the Cesi June celebrations.
During winter months wild boar hunting takes place and makes its way on to the tables in the Cesi taverns. It goes well with first courses such as in pappardelle (pasta) sauce or in plain or spiced stew as a main course.
